Spring Asparagus & Leek Custard Tart
Makes 8 servings
Fresh • Seasonal • Elegant • Nourishing
A creamy plant-based custard tart filled with sweet leeks, tender spring asparagus, and fresh herbs, all nestled in a crisp, flaky crust.
This recipe is 100% plant-based.
If you’re anything like me, the moment pastry is involved I’m already halfway convinced the dish will be good. Whether it’s a pie crust or the delicate layers of puff pastry in a tart like this one, there’s something about pastry that makes a meal feel just a little more special.
Luckily for us, many store-bought puff pastries are naturally vegan, which means we get to enjoy all those beautiful flaky layers without the labor of making them ourselves. As much as I love making dough and pastry from scratch, puff pastry is one of those things that is both time-consuming and surprisingly good when someone else has done the work. A good store-bought puff pastry is a gift to the home cook.
And once you add a custard, now you’re really speaking my language.
This one is savory — silky, gently herbal, and full of quiet umami from miso and nutritional yeast. Everything goes into the blender, and within seconds you have a custard that bakes into something light and creamy, almost like a delicate soufflé. It’s one of those small kitchen miracles that plant-based cooking allows: turning simple ingredients like silken tofu into something that feels elegant and comforting at the same time.
While the pastry par-bakes in the oven, the vegetables cook quickly on the stove. Sweet leeks soften and melt into themselves, asparagus brightens and roasts along the edges, and before long everything comes together into a tart that looks far more complicated than it actually is.
This is the kind of dish I love to serve when the table needs something beautiful — sometimes even for a holiday meal — because it feels fresh and celebratory without being heavy. A crisp pastry crust, a creamy custard, sweet leeks, and rows of bright green asparagus arranged across the top like little lines of spring.
A sprinkle of vegan parmesan adds that final salty finish, though mozzarella or ricotta-style cheeses work just as well. You could even drizzle a little plant-based hollandaise over the top if you wanted to turn it into something truly extravagant.
One of the things I love most about this tart is the use of silken tofu. It’s incredibly versatile, full of protein, and capable of becoming both savory and sweet custards with very little effort. Plant-based cooking has come a long way, and recipes like this one are a reminder of just how creative and nourishing it can be.
But more than anything, I love the way this tart looks when it comes out of the oven. The golden pastry, the creamy custard, the roasted asparagus lined up across the top. It’s simple food, but it has that quiet kind of beauty that makes a meal feel memorable.
This recipe is definitely one of those Small Beautiful Things.
INGREDIENTS
For the Tart
1 package vegan puff pastry (usually 2 sheets)
(½ of a standard package)
1 bunch asparagus, trimmed
1 medium leek, finely sliced and rinsed
1 Tbsp olive oil
¼ cup chopped fresh herbs
(chives, thyme, sorrel, or parsley)
¼–⅓ cup vegan Parmesan or mozzarella-style shreds
Savory Tofu Custard
8 oz silken tofu
(about half a standard block)
1 Tbsp white or mellow miso
1 tsp Dijon mustard
1 Tbsp nutritional yeast
1 Tbsp cornstarch
1 Tbsp olive oil
2–3 Tbsp plant milk
(to loosen, if needed)
Freshly ground black pepper
METHOD
Step 1 — Preheat the Oven
Preheat the oven to 400°F (200°C).
Line two baking sheets with parchment paper.
Step 2 — Prepare the Vegetables
Heat 1 Tbsp olive oil in a skillet over medium heat.
Add the sliced leek and cook gently until soft and lightly golden, about 6–8 minutes.
Add the asparagus pieces and cook for another 1–2 minutes, just until bright green and slightly tender.
Set aside to cool slightly.
Step 3 — Make the Savory Custard
In a blender or small food processor, combine:
8 oz silken tofu
1 Tbsp white or mellow miso
1 tsp Dijon mustard
1 Tbsp nutritional yeast
1 Tbsp cornstarch
1 Tbsp olive oil
Freshly ground black pepper
Blend until completely smooth and creamy.
If the mixture feels very thick, add 1–2 Tbsp plant milk until it pours easily.
Step 4 — Prepare the Puff Pastry
Unfold the puff pastry sheets and place them on the prepared baking sheets.
(If using smaller sheets, both may fit on one baking sheet.)
Lightly score a ¾-inch border around each sheet, being careful not to cut all the way through the pastry. This allows the edges to puff into a crisp, golden crust while helping the center remain flatter.
Prick the center lightly with a fork.
Step 5 — Par-Bake the Pastry
Bake for about 8 minutes, just until the pastry begins to puff and set.
Remove from the oven. If the center has puffed, gently press it down with the back of a spoon to create a flat surface for the filling.
Step 6 — Assemble the Tarts
Spread the sautéed leeks evenly over the pastry inside the border.
Pour a thin layer of the savory tofu custard over the leeks.
Arrange the asparagus over the top and sprinkle with the vegan Parmesan and fresh herbs.
Step 7 — Bake the Tarts
Return the tarts to the oven and bake for 20–25 minutes, or until:
The pastry edges are deep golden and crisp.
The custard is lightly set.
The vegetables are lightly roasted.
Step 8 — Rest and Finish
Allow the tarts to rest for 5–10 minutes before slicing.
Finish with a sprinkle of fresh chives, sorrel ribbons, and a little lemon zest, if desired.
Serve warm.
NOTES
Puff Pastry Sizes
Most puff pastry packages contain two sheets, though the sizes vary by brand. Smaller sheets (about 8 × 10 inches), such as Aussie Bakery puff pastry, work perfectly for this recipe and often allow both tarts to bake on a single baking sheet.
Why the Pastry Is Par-Baked
Par-baking the pastry before adding the filling helps keep the crust crisp beneath the custard while giving the edges a head start on becoming beautifully flaky and golden.
About the Custard
The savory tofu custard should be spread in a thin, even layer over the pastry. As it bakes, it becomes light and creamy, gently holding the vegetables together without becoming heavy.
Using Leftover Custard
Depending on how generously you spread the filling, you may have a small amount of custard left over.
It makes a wonderful savory vegetable bake.
Stir the remaining custard together with sautéed vegetables and add:
1 Tbsp chickpea flour
1 tsp additional cornstarch
A little extra nutritional yeast
Bake at 375°F (190°C) for 30–40 minutes, or until softly set.
Seasonal Variations
While asparagus and leeks create a beautiful spring tart, this recipe welcomes every season.
Mushrooms with extra vegan Parmesan make a wonderful cooler-weather variation, and other tender vegetables can be substituted as they come into season. Let the market—or your garden—guide you.
A Final Thought
Every season has its own quiet gifts.
Spring arrives with tender asparagus, sweet young leeks, and herbs that seem almost eager to return to the kitchen after winter. This tart lets those simple ingredients speak for themselves, reminding us that some of the most memorable meals don’t need to be complicated—they simply need the freshest ingredients and a little care.
I hope this tart becomes one of the recipes that welcomes spring back to your table year after year.

It asks us to slow down,
to listen,
and to remember what is enough.
