Velvet Broccoli Cashew Cheddar Soup
Makes 6–8 servings
Creamy • Comforting • Nourishing • Velvety
A silky broccoli soup blended with cashews, vegetables, and a rich plant-based cheddar sauce for a bowl that is both deeply comforting and surprisingly nourishing.
This recipe is 100% plant-based.
I know the title of this recipe may sound a bit over the top, but honestly it earns every one of those words. This soup is velvety in the most luxurious way, and it’s full of savory, umami-rich flavor. Often I make it without adding any vegan cheese at all. If I do add some, it’s just a small sprinkle on top — the soup is already wonderfully cheesy and satisfying on its own.
The small amount of cashews makes a world of difference, giving the soup its creamy body without heaviness. And the squeeze of lemon at the end is just the right finishing touch. It brightens everything and makes the flavors come alive.
It’s also a beautiful way to eat a generous amount of broccoli, even for people who think they don’t love broccoli. Once blended into the soup, the flavor becomes gentle and balanced rather than strong or dominant.
And about that word velvet — it truly is velvet. You can blend the soup until it’s completely smooth and silky, or you can leave it at the stage I personally love, where the texture is creamy but still has the faintest hint of tiny granules. It’s smooth, but with just enough body that it almost feels like you can chew the soup.
This soup can easily be a meal on its own, especially with a big slice of homemade sourdough bread on the side. I love to toast a thick slice and melt a little cheese on top, sometimes adding a slice of tomato either under or over the cheese.
It reminds me of when I was a child and my mother used to make Welsh rarebit. She was British, and my favorite part of that dish was always the thick slice of tomato that sat on the toast before the warm cheese sauce was spooned over the top. So serving this soup with toast and tomato brings back that same kind of simple, comforting deliciousness.
Broccoli, like its cousins cabbage, cauliflower, and Brussels sprouts, belongs to the remarkable family of cruciferous vegetables — foods known for their deeply supportive role in human health. Nutritional yeast, beloved in the vegan kitchen, adds not only its savory depth but also a rich supply of B vitamins.
And if you’ve ever tried growing broccoli in the garden, you’ll know it can be a bit of a battle. It’s one of those vegetables that seems to attract every hungry insect in the neighborhood. But when a broccoli head finally grows successfully in your garden, it feels like a small victory — and it makes a bowl like this even more satisfying.
For some people, soup is just a bowl of soup — maybe even just a side dish. But for me, soup is something much more special. It’s a way to bring together a handful of vegetables, herbs, and spices and transform them into something deeply nourishing.
There are endless ways to make soup and endless flavors to explore. I truly adore soups. In fact, I’m not sure there’s anything better to place on your table during the cooler months than a hearty bowl of soup.
Soups invite creativity in the kitchen. They can be sweet, smoky, bright, earthy, savory, or deeply umami — sometimes all at once. And they satisfy in a way that feels almost elemental. They warm the body, nourish the body, and somehow quiet the mind at the same time.
If you’re looking for something to warm your soul on a day when you need comfort — when you feel like you could use a big, quiet hug — make yourself this bowl of soup and let it nourish you.
And you’ll understand exactly why I say this is food that feels like medicine.
INGREDIENTS
For the Soup
2 Tbsp extra-virgin olive oil
1 small sweet onion, finely chopped
3 cloves garlic, minced
1 medium russet potato, peeled and chopped
3 medium carrots, peeled and chopped
⅔ cup raw cashews
4 cups vegetable broth
1 vegan “no chicken” bouillon cube
4 cups broccoli florets, chopped into small pieces (reserve about 1 cup if you’d like more texture in the finished soup)
½ cup nutritional yeast
½ tsp smoked paprika
½ tsp Dijon mustard
1 tsp fine sea salt, or to taste
Freshly ground black pepper, to taste
1–2 cups water, as needed to reach your desired consistency
1–2 tsp fresh lemon juice, added at the end
For Serving (Optional)
Shredded vegan cheddar
METHOD
Step 1 — Build the Flavor Base
In a large soup pot, heat the olive oil over medium heat.
Add the chopped onion and cook for 7–8 minutes, stirring occasionally, until soft and lightly golden. This step builds the rich foundation of the soup.
Add the garlic and cook for about 1 minute, just until fragrant.
Step 2 — Simmer the Soup Base
Add to the pot:
Potato
Carrots
Cashews
Vegetable broth
Bouillon cube
Nutritional yeast
Smoked paprika
Dijon mustard
Salt and black pepper
Bring to a boil, then reduce the heat and simmer for 12–15 minutes, or until the potatoes and carrots are very tender.
Step 3 — Cook the Broccoli
Add 3 cups of the broccoli florets and simmer for 5–7 minutes, until tender and bright green.
Reserve the remaining broccoli if you’d like more texture in the finished soup.
Step 4 — Blend Until Silky
Carefully transfer the soup to a blender, working in batches if needed, and blend until completely smooth and creamy.
Return the blended soup to the pot.
If the soup is thicker than you prefer, stir in 1–2 cups of water until it reaches a velvety, spoonable consistency.
Step 5 — Add the Remaining Broccoli (Optional)
If you reserved some broccoli for texture, stir it into the soup now and simmer for about 5 minutes, or until tender.
Step 6 — Balance the Flavor
Stir in 1–2 tsp fresh lemon juice.
Taste and adjust the salt and black pepper as needed.
The lemon brightens the soup and makes the “cheddar” flavor shine.
Step 7 — Serve
Ladle the soup into warm bowls.
If desired, finish with:
Freshly cracked black pepper
Extra nutritional yeast
A sprinkle of vegan cheddar
A light drizzle of olive oil
NOTES
Lemon Is Essential
A small squeeze of fresh lemon juice at the end brightens the soup and brings the “cheddar” flavor to life. It may seem like a small addition, but it makes a remarkable difference.
Cashew Richness
For a lighter soup, use ½ cup of cashews. For an even richer, more velvety texture, increase the amount to ¾ cup.
Thermomix Method
This soup blends beautifully in a Thermomix. Begin by sautéing the onion in the olive oil until soft and fragrant, then briefly cook the garlic.
Add the potato, carrots, cashews, vegetable broth, bouillon cube, and seasonings. Cook until the vegetables are tender.
Add the broccoli and cook just until softened, then blend until completely smooth. The broccoli melts into the soup, creating an exceptionally silky, deeply comforting bowl.
Reheating
The soup thickens naturally as it rests because of the potato and cashews. When reheating, simply stir in a splash of water or vegetable broth until it reaches your preferred consistency, then finish with another small squeeze of fresh lemon juice to brighten the flavors.
Serving Suggestions
Finish each bowl with freshly ground black pepper, a sprinkle of vegan Parmesan, and a little chopped fresh parsley for a simple, beautiful finish.
A Final Thought
Some recipes become part of our lives not because they’re reserved for special occasions, but because they quietly care for us on ordinary days.
A warm bowl of broccoli cheddar soup has a wonderful way of making a chilly afternoon feel brighter, an empty table feel welcoming, and a busy week slow down for just a little while.
I hope this becomes one of those dependable recipes you turn to whenever you need a little comfort in a bowl.
This is the kind of food that nourishes quietly.
It asks us to slow down,
to listen,
and to remember what is enough.
